The ricotta of salted and seasoned sheep, in a small conical trunk shape of about 400 g.
It is born, like the fresh sheep ricotta, from the whey of sheep’s milk of the pastures of Sardinia. Then it is pressed, salted and seasoned to acquire the ideal texture for the grater.
The paste is hard and compact, white and slightly crumbly when cut.The taste is savory and intense, typical of ricotta but accentuated by seasoning.
You can almost slice it like a cheese, and it is delicious to accompany bread or croutons. In the kitchen, grated, it is the special ingredient of many dishes with an ancient and fascinating taste.

DESCRIPTION
In fact, it derives from a careful selection of raw materials, which are part of the gastronomic heritage of Irpinia. These are cow's milk from the pastures of Irpinia and Samnite and the prized black truffle from the Laceno plateau.A special union created by precious ingredients can only give a truly singular result. The Milk Coop promotes the specialities of its land, with the arduous task of not altering their essence in any way.Cow's milk is curdled with the sole addition of rennet, salt and milk enzymes. After a resting period, the cheese is cut into slices and immersed in boiling water. In that same boiling water, with his great skill, the cheesemaker moulds the cheese, to which truffle flakes are added at this stage, and gives it its classic shape with a smaller head and a rounded body.CONSERVATIONStore the product once the package is opened, in the refrigerator at a temperature of +4.

he two main types of caciocavallo can be obtained from the preferred ripening time: mature or chamois.Focusing on the caciocavallo with crusco peppers, this follows exactly the traditional preparation of caciocavallo, with the addition (during the cheese production phase) of crusco peppers, a typical product of Lucanian cuisine, with a sweet flavour and a rubeous colour.Already during the dough preparation phase, from the moment the cruschi peppers are added to the mixture, they begin to release their fragrant and enveloping aroma into the mixture being prepared, enriching it with the typical top notes of the Lucano product. The pepper's thin flesh and low water content also prevent dilution of the caciocavallo mixture, keeping the typical component of the product unaltered, while at the same time sublimating it to a sinuous spiciness reminiscent of chilli peppers. CONSERVATIONStore the product once the package is opened, in the refrigerator at a temperature of +4.

The perfect balance between sweet and salty and the crumbly and grainy straw-yellow paste make it perfect for all traditional Italian dishes and excellent with medium-bodied wines. Very interesting are the notes of fresh milk, still present.
A culinary gem, with a rich and complex flavour, slightly tangy, and a history dating back to the Roman Empire.
It is a PDO: protected by the Protected Designation of Origin. It can only be produced in Lazio, Sardinia (where most of it is made) and the province of Grosseto, and only using milk and rennet from local flocks.
It is made from whole sheep’s milk and is designed to keep for a long time whilst retaining all its flavour and nutritional qualities: for this reason, it must mature for between 5 and 8 months.
It is produced in large wheels weighing over 20 kg. The rind is smooth, pale yellow in colour, bearing the consortium’s mark which guarantees its origin and meticulous production. The cheese is white, hard and compact.
A rich, full aroma is released as soon as it is cut or grated; the flavour is intense, slightly piquant and typically on the salty side.
Pecorino Romano is a key ingredient in traditional recipes. It is simple, yet precious and authentic: delicious when grated or enjoyed in chunks with raw vegetables. Thanks to its long maturation period, it is naturally lactose-free.
