DESCRIPTION

Lard, also known as suet, is an animal food fat obtained by melting the fat in the adipose tissue of the pig. It appears as a compact paste that is white in color.

When cold it is almost odorless, while when hot it gives off a faint but characteristic odor.

 The flavor when hot is not very strong. It melts at about 40-42°C. The consistency of melted lard is oily and transparent. In the final stage of cooking it tends to a yellow/beige hue. It differs from lard, which is obtained from pig back fat and cheek fat.
