The characteristic is precisely the presence of lard (lard, pork fat) in the dough that makes them pleasantly crumbly, but fundamental are also the addition of chopped almonds, always in the dough, and whole almonds and toasted on the surface, as well as the rich presence of ground black pepper in the pasta, a real peculiarity of the taralli that makes them slightly spicy: a strong and irresistible flavor!
